Homemade breakfast sausage patties seasoned with sage, thyme, and warm spices, then air fried at 400F for crispy edges and a fully cooked interior in about 12 minutes.

Ingredients

Scale
  • 1 lb ground pork (80/20 fat ratio)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried sage
  • 1/2 tsp dried thyme
  • 1/4 tsp red pepper flakes
  • 1/4 tsp garlic powder
  • 1 tbsp brown sugar (optional)
  • 1/4 tsp nutmeg

Instructions

  1. Mix all seasonings into the ground pork until evenly distributed. Do not overwork the meat.
  2. Divide into 8 equal portions and flatten each into a patty about 3/4-inch thick. Make them slightly larger than desired since they shrink slightly during cooking.
  3. Refrigerate for 30 minutes if time allows, or cook immediately.
  4. Preheat air fryer to 400F.
  5. Place patties in a single layer in the basket. Do not stack or overlap.
  6. Air fry at 400F for 10 to 12 minutes until the internal temperature reaches 160F.

Notes

No oil needed — sausage contains enough fat to baste itself during cooking. Adding oil can cause excess smoke.

To prevent smoking, add 2 to 3 tablespoons of water to the drawer underneath the basket before cooking.

For store-bought fresh patties: cook at 400F for 8 to 10 minutes (8 min for 1/4-inch thick, 10 min for 1/2-inch thick).

For frozen patties: air fry at 400F for 14 minutes, flipping once at the halfway point.

Cooked patties keep refrigerated up to 5 days or frozen up to 3 months. Reheat at 350F for 4 minutes from refrigerated or 6 minutes from frozen.
