Air Fryer Broccoli

Crispy, caramelized broccoli florets with lightly charred tips and a tender interior, cooked in the air fryer at 400°F in just 10 minutes. A simple, minimal-ingredient side dish that outperforms steaming and oven roasting for texture and flavor.

  • 4 cups broccoli florets (approximately 1 large head or 1 lb)
  • 1 tablespoon olive oil (or avocado oil spray for lighter coating)
  • 1/4 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon garlic powder
  • Optional: Parmesan, red pepper flakes, sesame seeds, lemon zest, or soy sauce

Instructions

  1. Cut broccoli into small, uniform florets about 1 to 1.5 inches across. Rinse under cold water, then pat completely dry with paper towels — surface moisture will steam the florets and prevent crisping.
  2. Place dried florets in a large bowl. Drizzle with olive oil and toss to coat evenly. Add salt, pepper, and garlic powder, then toss again until every piece is seasoned.
  3. Preheat the air fryer to 400°F (200°C) for 2 to 3 minutes. Transfer seasoned florets to the basket in a single layer with space between pieces — cook in batches if needed.
  4. Air fry at 400°F for 8 to 10 minutes, shaking the basket once at the 5-minute mark. Start checking at 7 minutes; florets are done when tips are darkened and frizzled and stems are tender when pierced.
  5. Transfer to a serving bowl immediately. Add any finishing touches (lemon squeeze, Parmesan, sesame seeds) while still hot and serve within 5 minutes for best crispiness.

Notes

Cut small and uniform: Aim for 1 to 1.5-inch florets — smaller pieces have more exposed surface area and crisp up faster and more evenly.

Dry thoroughly: Even a little residual water causes steaming instead of roasting. Pat dry well, or let florets air-dry 5 to 10 minutes before oiling.

Don’t overcrowd: A single layer with space between florets is essential — an undercrowded basket always beats an overcrowded one.

Use 400°F: Temperatures below 375°F produce soft florets without browning. 400°F is the minimum for caramelized, crispy tips.

Check at 7 minutes: Air fryers vary — start checking early to avoid burning the tips before the stems cook through.

Don’t discard the stalks: Peel, slice into coins or sticks, season, and cook alongside florets for a zero-waste dish.
